Traded a Submariner plus $ for a Breitling Chronomat recently. I agree on the Rolex being something of a "dead horse." Breitling ok? And one I'd LOVE to wear is Audemars Piguet Royal Oak series. Damn! Can't fit the bill for that one, however

I have had all four. I had the Panny hand-wind (Unitas-based mvmt) and it was a terrible timekeeper. Great looking watch and was a pre-Vendome model from Florence.
Breitling with a 7750, no complaints.
Rolex SD and Deep Sea. Awesome. +1sec a day. Sub as well, same COSC spec. 3135 movement is probably the best timekeeper made. No epicyclic gear train and the rotor rides on a jewel, but amazing and virtually indestructible.
I had a RO carbon fiber for a week. The finish on the CF was getting dull. Back to the dealer for a refund. "Forged" carbon fiber...? my ass.
My daily wearer is a SBBN013 ti/ceramic diver. Worn by North Sea diving crews. Amazing watch. Also the Rolex Deep Sea. I am looking for a Co-Axial Ploprof too.
