sausage is the worst. i lived in a meat packing town. home of john morrell now smithfield meats. toured the plant several times. sausage is made with the fatty scraps that they trim off the meat. they collect all of those scraps and grind it up into sausage meat.
It's not good for you in excess that's for sure....but have you ever had sausage stuffed with caramelized onions and provolone cheese??? Holy shit!! Mmmmm
