Are there any good brokers who offer demo charts where I can see the flow of options data?
One of the issues would be, I am guessing, is that data (options quotes) are transient, and you can't backtest, unlike FX futures.

Are there historic quote datasets that I can number-crunch?

There's software like OptionVue and OptionNET (not free, but maybe they have free trials). If I remember correctly, you can backtest in ThinkorSwim (a broker, which is free) but the data and accuracy are questionable. See the link below. Again, there's quite a learning curve if you're new to options--and I'm not an expert.

Is there a tolerance level at which price an option is exercised?
What I mean is, does the strike price need to be more than a certain amount more or less than the underlying price before you can be certain you are going to be exercised?

Example; MSFT, at 107.00, you have sold a Call at 110.00.
Is it worth someone to exercise you if the price of underlying goes to 111.00?
Or does the buyer need to see price go beyond a higher price, eg, 114.00, before it's worth exercising.
I suppose it depends on the needs/perspective of the buyer, but I am trying to get into the head of the guy on the other side of the trade.

As to your quest to learn options and become profitable in less than a "Lifetime" -- the learning curve may not be as complex as provided in the above posts. I was an equity trader first, then a futures trader, then traded options. Depending on your effort and experience it should take only 10 days for you to learn the "parts of option trading" that you need to learn and then forget all the other "subtleties" and live happily ever after. (No attempt here to sell you or others anything.)

You may also want to read up on the writings of Nassim Taleb. I found his view of options very profound and thought provoking.

A word of caution: As retails we are essentially mom and pop amateurs and trade against some of the smartest financial professionals in finance. There is no free lunch and it is hard to come out ahead.
