This is because costs get passed on to consumers. Higher transportation costs? Pass them on. Higher raw materials? Pass it on. Company operate with the same margins, and the consumers pay the difference. You think regulating this is a good idea, but that's because you're a fucking idiot. All you're going to do is cause competition to evaporate and get out of the business. And when you do that with food suppliers, you're going to end up with food shortages.
This isn't to say that there isn't evidence of price gouging in certain industries. There is. But the overall food industry, from the farmer to the manufacturer to the grocery store, has razor thin margins. And they'll just pass on those prices to consumers.
