I can't argue about sugar, but I don't know about throwing fibrous whole-food carbs out with the simple carb bathwater. I think that is Ornish's point. Also, at the 3-minute mark, he discusses a cardiac patient whose arteries he shows before and after the kind of diet he proposes.
Well, that might overstating it a bit. Limiting fat does not mean virtually eliminating it. I get what I believe to be a reasonable amount of fat from my diet mostly in the form of nuts and seeds, small amounts of lean meat and a bit of olive oil here and there.Sure, but when you limit fat and sugar... what have you got? A vegan diet of beans, potatoes, oats...
