The guy is a renowned surgeon who has invented procedures. Like any ethical doctor, he disguises the identity of his patients and doesn't name drop. Why should he stick just to surgery when less risky and invasive treatments, like nutrition can give better results?
Further his diet is not vegan or even vegetarian. Its low carb. LOL

Not clear from write up how much of the mouse improvements are from added protein vs. lower carbs.
Best diet so far is shaping up to be a slow carb, somewhat lower carb type diet, with a smaller amount of protein(either from healthy meat like seafood or veggie sources). BUT, with a lot of nutritional value.
Or, as Gundry and Fuhrman like to put it, a nutritionally dense, calorie light diet.
You might try reading some of this literature. Could be you'd learn something, such as this stuff is not just one more 'eat your veggies' rehash.
You're too hung up on 'Vegan', without understanding that just cuz sumpin's a veggie doesn't mean it's good for you to eat. Just as there's a huge diff between eating wild caught salmon vs. a slab o' bacon sizzling on your stove, there's a huge diff between what kinds of veggies one eats.
That's just for starters...try the cooked vs. raw angle and it gets really interesting.
