What is the best e mail service

I have been using google for a while, it is free and easy but of course it is not safe from data mining etc.

Just wondered what you guys use and would recommend that is easy to use and has some degree of safety, I don't mind paying for the service if I have to.

I'd been using Google Apps for a few years (both free and paid versions), but have moved away from them earlier this year for the reasons you stated. I went back to using my own mailserver - then access with Mail.app.

If you're not interested in managing your own server, I'd highly recommend Rackspace's email service (http://www.rackspace.com/apps/email_hosting)
