The last poll I read was ~80% of Europeans support sanctions against Russia. This is also in line with the conversations I have with Europeans.

This report is stale (June 2022) but it was the top search hit and I'm not going to waste time digging. I've seen similar numbers more recently and I've seen them from a variety of sources.
I believe you're right that a difficult winter will shift the numbers a bit, but not like you imply. Europeans, broadly speaking, have long memories of history and are willing to make sacrifices where they believe it is necessary.
A few key figures from the link:

65% see EU membership as a good thing
Russia is seen positively by 10%, down from 30% in 2018
~60% of Europeans are not confident their life will continue unchanged AND YET ~60% see the defence of common European values such as freedom and democracy as a priority - even if that were to affect prices and the cost of living. They say this at the same time that ~40% of Europeans say they are already experiencing an impact on their standard of living.
