best undelete software is called "restore" from a "backup" - as a responsible computer user, you surely have a back-up, don't you? 
Seriously, this now depends on a) which e-mail program you use and b) if and how this program re-uses space freed by deletions.
Better backup what you currently have, before any further trials or working with e-mails!
