The most ridiculous part is that he would have given that pizza an upper medium review. Then suddenly after he got criticized he turned it into the "worst pizza in America" and "this is everything that is wrong with America". What a laughable clown. The sadest part of all this is that one can be loud, pompous, and highly aggressive and still gather a large fan base. Decades ago someone would have taken a swing at him and knocked him out for good. Today the same asshole sucks in dummies like shit attracts flies.

He messed up badly with the Dragon place where the owner tackled him. Even a couple of women walking in were saying the pizza was good there, he was not being honest.

Like women, the worst pizza is wonderful if you are hungry enough. He was getting picky, too much parmesano is just their style. My wife uses crazy amounts if it, I'm often having to remind here that it is a cheese pizza, a half pound of parma is not needed. FLOPPY? He was messing around.

He tried to bully somebody who didn't want his review and exaggerated fault, by some margin. The owner was clearly a normal non-politics guy and he is right, he had no reason to invite an assassin, the flood of local support shows Portnoy was wrong.

I have three pizza ovens two I hand built, one is an restaurant convection oven which surprised me in it bakes NY style better than anything. Another is Neapolitan, super hot and I can cook a 20 inch in 50 seconds all night long. The other was an experiment to make a calzone specialist one but I have not spent enough time tweaking it. Apparently Florida style is deep fried calzone

I disagree with the way he wants to make pizza places live or die like this. He can be entertaining but his ratings are for the birds.

Slow ferment, no less than 3 days, caputo 00, hydration 62%, 1.69% salt. No oils added other than to coat the dough when its going into its individual container where it will ferment at a time and a temp that I so desire.
