Especially out west, the water sucks for making great pizza dough.
100% Agree. The food is spectacular at some of those restaurants.@Clubber Lang Italian restaurants are a lot more than pizza shops. Having dined at Quince a few times I can attest that it's top notch.
Another Italian spot Acquellero also in SF an excellent choice.
