There is so much shit that is wrong with your post that I dont even know where to begin. Don't get me wrong, all the foods you posted are healthy for you indeed....but making connections between shapes of something or the growth rate of something to the advantage of that food...seriously...
bone is 2 to 2.5% sodium ...not 23%
real science does not and will not (ever) make the connections that you just made...
Actually Israelis did some tests with Pomegranates [four chambers, shaped like the heart] and found that the juice is amazing for the heart, it increases circulation significantly. Others found that the Walnuts are very good for the brain in several ways, take some at night and you get to sleep quicker, carrots are known to be good for your eyes since I don't know when [vitamin A].
Lighten up, I believe in a creator that makes things not too complicated for us. the evidence is everywhere btw.
Probably you are "scientific" and have to throw krap at anything that is not "science", like I said, lighten up, keep your eyes and your opinions open.
Back on topic, one doctor from Mexico, I guess he worked in a Cancer clinic or something, said that 99% of Cancer patients are constipated. I'm thinking that the benefits of veggies is not entirely what is in them but that they are easy to digest and excrete quickly. For those of us that don't like to spend hours every day chewing I recommend Metamucil, it has Psyllium Husk Fiber in it which feeds your friendly bacteria in your colon and keeps their populations large and that reduces the population of the unfrendlies like yeast and whatnot. Wifey and I buried her cancer ridden dad last year, taking a dump was a big deal for him, that was a red letter day for the guy, gadz... he had an enema bag and all that stuff but he was a "science" guy so he had to have proof that being constipated was bad before he would think about his diet !! I seriously could not stand the guy, many people could not stand him, but he was very ill and a relative so wifey and I put in tremendous time and effort trying to help him. He rejected "non-science" cures immediately at the outset so I got to watch him do chemo !! There is some "science" for ya... the doctors believe in the science but many will not take chemo themselves...
The oldest guy on earth that died a year or two back was 115 yo and he lived on pancakes and sausage.... my guess is that he never was constipated.
I've studied this stuff for decades now, there has to be a distinction in the goal. If you want to recuperate from something, you go vegan. If you want to have a life you are not going to be able to do that forever with the vegan diet. Anthropologists have found, and they all agree that there is not a spot on the planet where you can get all the nutrients you need without eating meat. You can use supplements to try to make up for meat deficiency, I'm not sure that our "science" is adequate to really tell us what all we should take really. I've known long-term vegans that are desperately short in the brain nutrition area, Omega3's from plants are not good for much, phosphatidylserine is not available from plants, there is a pretty good list of stuff that is not available from plants, I don't have it right now.
My take on human dentition is that it is explained in Genesis. People were told to eat veggies until after the flood. The flood changed the earth drastically and then meat was added in the time of Moses. So we were made to eat plants, plants are the key to recovery but they don't supply all the nutrition that they did before the flood, in fact it changed the atmosphere and our food needs changed drastically... don't wait around for "science" to get that figured out, it doesn't fit their world view so they would bury it in a heartbeat anyhow...
