Each large size egg yolk will emulsify up to about 5 TBS of butter or up to around 3/4 cup of oil plus lemon juice, vinegar or wine --- the principle behind homemade mayonnaise, hollandaise. and several other sauces. I often make homemade mayonnaise to avoid all the additives that are in commercial mayonnaise.So add more additives/chemicals to mix oil and water.
