What has surprised me is that they don't eat that much pasta or rice which I figured must be a large part of the vegan diet.
My associate says he gets up in the morning and eats a handful of veggie-dogs (hot dogs) with mustard on them. Sometimes he goes to the Subway with me at lunch and he gets a sandwich with every vegetable they have on it (really huge) and then a bunch of mustard (no mayo, its made from eggs).
He is a big guy, maybe about 250 lbs, 6 feet tall so he must be getting sufficient nutrition. Like I said, its rubbed off on me and I eat a lot of vegetables now.
My rice cooker has a steamer basket that goes in the top so I can cook rice and vegetables at the same time. I try to take it easy on the rice because they are saying it has a high glycemic index and causes Type-II diabetes but the steamed veggies are pretty good. I'm eating lots of fruit, particularly at breakfast.
I still like some fish, halibut season right now and that is delicious and I also like salmon (farm type, not the wild stuff). I eat beef once in awhile but I'm trying to eliminate it. I eat chicken maybe a couple of times a week at lunch, sometimes turkey.
I still like sushi.
