Well then they can do whatever they want with it after it's accepted. The point is it's accepted right? I dont think it's our responsibility to make sure they never convert it back to fiat...

No they don't. The "app" that allows you to use Bitcoin at Starbucks actually pays them in USD. Then they take Bitcoin out of your wallet for themselves. At no point does Starbucks possess any Bitcoin.
