Your uses are not CPU intensive so its doesn't matter, however if you want a high end gaming box you want nVidia especially if the games you play benefit from Ray Tracing. nVidia's implementation of Ray Tracing is far superior than AMD's.
The best card in terms value & performance is the RTX 3070 -- $300 used in the US anyway. Also if you are using programs that don't make use of multiple cores then the 13th generation Intel Core i7 13700K is the
fastest for single core performance (under $600).
If you want to build a PC based on the new Intel & AMD platforms (LGA1700 & AM5) it will be a lot more expensive since the motherboards & the DDR5 SDRAM just came out, especially the AM5 motherboards which are very expensive right now -- at least $250-300. You could save $200-$300 just buying the older AM4 boards and DDR4 SDRAM. The top AM4 Ryzen 5950X is only $400-$500 here in the US.
