But on a more serious note, why would you want to convert her in the first place? Not very open minded on your part, now is it? If she truly is rational and open minded, you have a difficult task in front of you. A zealot would be much easier to convert.
Why would you even bother? This gives you an edge. Whenever you want to do something and she doesn't, or doesn't want to let you, just say that God wills it and quote a random Bible verse.
In fact I think a girl who is religious enough to be submissive and remain loyal to you etc., but not so religious that she won't fuck you without too much effort, might be the ideal.
Rational adults tend to retain a belief in ghosts because they find it hard to believe in people.
Edit: those adults who while being more or less rational tend to retain a belief in ghosts do so because their experience in life has made it hard for them to believe in people and yet need to believe in something that soothes them (like "bad" people being punished in the end and "good" ones being rewarded, etc.)
Prove her wrong (with deeds, not logic) about the (some) people part and the "ghosts" mumbo-jumbo will fall out of its own accord.
