While that is romantic surf, I would approach it differently.

I would take her class, ace it by only showing up for tests (I don't have time to study as I would be developing automated trading models during the day), then go on to write a paper with her where we spend many hours together at night thinking about the cosmos, culminating in a Grand Unified Field Theory that includes Gravity.

The rest follows easily from these Lemmas :D (at least it does in the movies :( )

Look up which seminars she's going to be presenting at this year. Seeing as though she’s a researcher, she probably markets her papers and presents at seminars at least once a year. Read her papers and attend a presentation. After the seminar, go up to her and introduce yourself with a few remarks/ask questions on her research. Later, you can email her/contact her and make references to the event. Leaves room for open communication and you don't have to take a class you don't have time for.
