You should try some matzoh with honey. Yum. Get your Jew on.
I don't mind a little matzoh, and have on rare occasions bought some. But I never acquired a taste for honey. On the other hand, maple syrup goes with just about anything.

A Croatian friend was taking about birch syrup they have the other day. Its basically the same I guess.
Never even heard of birch syrup. I looked it up, and its taste is apparently different from that of maple. It would be interesting to try it. In fact, I have not had maple syrup in quite some time, but the real thing is so good it may well be addictive. Can't imagine pancakes without it.
