Peking Duck! Yes, I like... last time I was in Beijing it took them about an hour to prepare it... apparently they had to kill it first, otherwise there's no other explanation why it should take that long. And it wasn't even that good where I tried it...

It takes ages to cook. Duck is very fatty and they crisp it.

You need it with pancakes. Otherwise it is too cooked to taste like roast duck.
