Wow. The topic is so subjective. In my case, it is very difficult to find software of almost any type that works the way I think. Like in coding, not every coding language will be "best" for every task. Not every program/app will be "best" for every task either.
I use Obsidian and logseq. I like/enjoy logseq more, it's "easier" imo, but the obsidian plugins make obsidian a must have. From time to time I will use a free old school hierarchical-tree program called CherryTree, with richtext features and objects.
You already found ToolsOnTech, and here's a short list of channels I followed FOR THIS TOPIC, in no particular order. Note... YT caption feature can come in handy, just saying. Anyway, you just have to try things for yourself. The original Snuggie comes in one size fits all. Not true for apps! And there is A LOT of AWESOME free stuff out there!

Not sure of the context of the privacy aspect you mention, but, both Obsidian and Logseq use md (markdown) files that reside locally. In both progs, your data is your data, physically and intellectually. I think it's Roam that has a terrible reputation for privacy.
Obsidian is powerful. Are you @tiddlywinks using any plug-ins?
