Presuming your "mobility" needs are more about fun and convenience than serious workload, that's what I would do. Get a quality workstation for a low price and then whatever laptop would be capable enough. A higher-end laptop would likely cost more than a "workstation + convenient laptop"...

If you need mobility, then of course you need a laptop of sorts. But if you don't need portability, a desktop workstation is much preferable IMV.

I personally don't favor laptops, but it's usually possible to run 4 monitors from one using adapters and/or daisy chaining. Less cumbersome to run 4 monitors from a desktop. Easier video solution.
