Live and learn, I was under the impression that all chefs, line cooks bring their own set of knives, tools of the trade. And that is not unusual in the trades eg technicians at franchised dealerships/ independent repair facilities bring their own tools & tool boxes. Good set of knives could be viewed as an investment /family heirloom and passed down like silverware.
I was was a broker dinner at a Michelin star restaurant and we shut the place down. We were seated by the kitchen and we saw guys walking out with what looked like flat violin cases. We asked one and he said it was their knives. Every one of them bought their own knife sets.
I now run a manufacturing plant and a lot of guys bring in their own toolboxes with tools.
Career people want their own tools I Guess.
