A GTX 1660 is enough, or something lower than this but still, a good and cheap graphics card that will do it's job.

A good option could be nVidia GeFore GTX 950 that supports at least 3 monitors and it's under $100 on Amazon. This is what I use right now and does it's job perfectly.

At the first question the answer is Yes. I don't have any of this but your workstation would be more future proof with double of RAM memory.
