The backfill data for IB/Ensign comes from IQFeed, not IB. Only the real time data comes from IB. As such, the backfill data can go back years (the Ensign max setting is 10 yr.). Exactly how far back you receive depends on the symbol. http://www.dacharts.com/faq/Ensign-refresh-changes.htm...

If you are not familiar with setting up time templates, you can use the Help button and search for "time templates" and/or "time templates editing" which explains how to do so. In short, you'll want to either create a new template (to prevent fussing up your current one :) and set the days...
