I'd venture a guess that they are just being ultra specific on their hiring page. If they use a linux environment, they at least want the person to be comfortable working in linux. It seems a shortcut to saying 'X years experience in writing java', 'X Years experience working in a linux...

There are potential IDE differences. I assume IntelliJ is the same in linux as it is in windows ( I use it in windows). Maybe some differences in path setting and execution of applications. I honestly can't think of anything else. Probably just recruiters not understanding what they are...
